For the moments you want to remain healthy but also indulge in some vegan junk food I am here for it. Eating healthy can be boring after a while, you want to spruce up your eating experience   and I have the perfect recipe for you. Vegan Strawberry pie is by far one of the best pies I have ever made. Always remember thee recipes can be altered as far as milk nit your not a soy fan like myself you can use any Non-dairy option you choose. Enjoy, and if you try it don’t forget to leave a comment.

Ingredients For Pie Crust

  • Cake Flour 200g
  • Vegan Bitter sweet chocolat4e 50g
  • Olive or grapeseed oil 45cc
  • Organic sugar 60g
  • Non- dairy milk
  • Vegan Margerine 40g

Ingredients For Filling

  • Non- Dairy milk 250 cc
  • Organic sugar 40g
  • Cake Flour 25g
  • Vegitable lecithin (or soy) 1 tbsp

Garnish

  • Organic Strawberries 1 box
  • Organic sugar 1/8 tsp
  • Vegan Jelly T-powder 1/8 tsp
  • Water 2 tbsp

Directions for Pie Crust

  • Put sieved flour in mixing bowl, follow with vegan margarine and olive oil; hand mix flour and oil into a grin like texture
  • Add Non-dairy milk, knead into dough, but do not overdo or else it turns gummy (gluten forming)and pie will not be crispy
  • Wrap dough with plastic wrap.leave inside fridge for 30 minutes.
  • Return now- fermented dough to work surface, sprinkle with flour, roll into round sheape and fit into mold.
  • Reshape piecrust, poke some holes into the dough using a fork; cover with foil, top with a layer4 of soy beans. ( this practice of using the doy bean is to prevent pie crust from rising whle being baked.)
  • Pre-heat oven to 180 C and bake for 15-20 minutes
  • During the last three minutes remove the layer of soy beans and foil, return to oven and bake until golden brown]Dissolve chocolate in a pan or bowl over hot water wand spread onto baked pie crust

Directions For Filling

  • Sieve cake flour
  • mix soya licithin with soymilk first, and let stand for 10 minutes
  • Empty all ingredients into pot, stir while cooking until it boils. Allow to cool a little, then pour into piecrust.

Assembly & Garnish

  • Rinse strawberry, remove base, wipe dry.
  • Garnish pie with strawberries
  • Combne 1/8 tsp vegan Jelly with 1/8 tsp sugar, add 2 tbsp of water, bring to a boil let cool, smear onto surface of strawberries
